Grilled Corn Elotes

This simple and delicious dish is perfect for a hot summer afternoon, serving as an easy and flavorful appetizer.

Ingredients:

- 4 ears of sweet corn, shucked

- 2 Tbsp olive oil

- 1/2 cup finely chopped cilantro

- 1/4 cup crumbled cotija cheese


For the Aioli:

- 1 egg yolk

- 2 Tbsp dijon mustard

- 2 Tbsp chili powder

- 2 Tbsp lime juice

- 1 clove garlic, grated on a microplane

- 1/2 tsp salt

- 1 cup vegetable oil (sunflower, safflower, grapeseed, avocado, or canola)

- 1 tsp hot sauce

Instructions:

To Make the Aioli:

1. In a medium-sized mixing bowl, combine the egg yolk, mustard, salt, garlic, lime juice, and chili powder. Mix well.

2. Slowly stream in the oil, a little at a time, mixing vigorously until all the oil is incorporated. Adjust acidity and salt to taste.

To Grill the Corn:

1. Warm a grill to medium-high heat (charcoal preferred, but gas will work).

2. Brush the corn with olive oil using a pastry brush and sprinkle with salt.

3. Grill until the kernels begin to blister and turn golden yellow, about 2 minutes on each side.

To Assemble:

1. Smear the aioli all over the grilled corn.

2. Roll the corn in crumbled cotija cheese and sprinkle with cilantro.

3. Serve immediately and enjoy!

This dish combines the sweetness of grilled corn with the tangy and spicy flavors of the aioli, topped with fresh cilantro and cotija cheese for a satisfying summer treat.
