Heather's Favorite Brussel Sprouts

A simple and flavorful way to enjoy Brussels sprouts, roasted to perfection with garlic, onion, and fresh thyme. The addition of sherry vinegar adds a delightful tang to the dish.


Ingredients


- 1 lb Brussels sprouts, washed, trimmed, and left whole

- 3 cloves garlic, peeled and roughly chopped

- 1/2 cup onion, cut into chunks

- Sherry vinegar (or sherry)

- Olive oil

- Chopped fresh thyme

- Salt and pepper



Directions

1. Preheat the oven to 350°F (175°C).

2. Place the Brussels sprouts, garlic, and onion in a baking dish. Drizzle 3 tsp of olive oil over them and stir lightly.

3. Bake in the preheated oven for 15 minutes.

4. Add a splash of sherry vinegar or sherry, and season with salt and pepper. Sprinkle chopped fresh thyme over the sprouts.

5. Increase the oven temperature to 375°F (190°C). Cover the Brussels sprouts with a lid or tin foil and bake for an additional 10-20 minutes, or until the sprouts are tender to your liking.
