Roasted Daikon with Miso and Sesame

A bold, flavor-forward way to showcase daikon. Roasted until tender and caramelized, then layered with a savory miso glaze and fresh, tangy toppings, this dish balances depth, brightness, and a hint of heat. Finished with sesame seeds and herbs, it’s a simple yet elevated side that pairs beautifully with rice, fish, or a quick weeknight meal.
Ingredients
- 1 large white daikon radish
- 2 scallions
- 1/4 cup fresh cilantro leaves
- 1 Tbsp sesame seeds
- 1 Tbsp miso paste
- 1/4 cup soy sauce
- 1 tsp chili oil or sriracha
- 2 cloves garlic, grated or pressed
- 2 Tbsp honey
- 2 Tbsp rice vinegar
- 3 Tbsp sunflower, avocado, or canola oil
Instructions
1. Preheat Oven:
- Preheat your oven to 425°F (220°C).
2. Prepare Marinade:
- In a small bowl, combine soy sauce, garlic, oil, miso paste, and chili oil. Mix well.
3. Cut Daikon:
- Chop the daikon radish lengthwise into 1" wide and roughly 5" long wedges.
4. Marinate Daikon:
- Place all but 2 or 3 pieces of the daikon on a sheet tray. Toss with half of the marinade.
5. Roast Daikon:
- Bake in the preheated oven for 20 minutes. Flip the pieces and bake for another 5 minutes, or until they are crispy and dark brown around the edges.
6. Prepare Garnish:
- While the daikon is baking, add rice vinegar and honey to the remaining marinade. Thinly slice the reserved daikon pieces and toss them with the marinade and sliced scallions.
7. Serve:
- Top the roasted daikon with the fresh marinated daikon and garnish with sesame seeds and cilantro leaves. Enjoy!
Serving Suggestions:
- This dish pairs wonderfully with fish, especially black cod or salmon. It also makes a great light lunch or dinner when served with white rice and a fried egg.
