Mushroom Tacos

Crispy, savory, and packed with flavor, these mushroom tacos are a satisfying plant-forward twist on a classic. Roasted mushrooms bring a rich, meaty texture, balanced with a bright, crunchy slaw and fresh toppings. Layered into warm tortillas, it’s an easy, customizable meal that’s perfect for weeknights or sharing around the table.
For the Crispy Mushrooms:
- 1 lb mushrooms (oysters and shiitakes are best)
- 3 Tbsp vegetable oil
- 3 cloves garlic, peeled and grated or pressed
- 2 Tbsp lime juice
- 1 Tbsp chili sauce
- 1 tsp salt
For the Slaw:
- 2 Cups finely sliced cabbage
- 1 cup thinly sliced batons of rainbow carrot
- 3 Tbsp lime juice
- 1 clove garlic**, peeled and grated
- 1/2 tsp salt
- 1-2 tsp chili sauce
- 1/4 cup roughly chopped cilantro
To Serve:
- 10 small corn tortillas, warmed on a cast iron skillet until pliant
- 1/2 cup sour cream (optional)
- 1 cup cooked beans
- 1 ripe avocado, sliced
- 1/2 cup queso fresco
Directions:
For the Mushrooms:
1. Preheat Oven: Set your oven to 400°F (200°C).
2. Prepare Marinade: In a small bowl, combine the oil, garlic, lime juice, and chili sauce.
3. Prepare Mushrooms: Clean the mushrooms and cut them in half if they are very large. Toss the mushrooms in the marinade and let them sit for at least 10 minutes.
4. Roast Mushrooms: Spread the mushrooms on a sheet tray, making sure they are not crowded. Sprinkle evenly with salt. Roast for 10 minutes, then turn with a metal spatula, making sure to scrape them off the pan to keep them crispy. Roast for another 10-15 minutes until golden and crispy.
For the Slaw:
1. Make Dressing: In a large bowl, mix lime juice, chili sauce, oil, salt, and garlic.
2. Prepare Slaw: Toss the cabbage and carrots in the dressing, massaging with your hands. Taste and adjust seasoning, adding more chili sauce if desired. Top with fresh cilantro.
To Assemble:
1. Warm Tortillas and Beans: Heat tortillas and beans as needed.
2. Assemble Tacos: Fill tortillas with crispy mushrooms, slaw, and any additional toppings like avocado, queso fresco, and sour cream. Enjoy!
