Lady Autumn Mashed Potatoes

A comforting twist on classic mashed potatoes, this recipe layers in rich flavor and texture at every step. Creamy potatoes and roasted garlic are blended with butter and cream cheese, then finished with crispy shallots and fresh chives for a savory, satisfying dish. It’s a simple side that feels just a little more special—perfect for gathering around the table.
Ingredients:
- 1/3 lb Yukon gold potatoes
- 1/3 lb waxy red potatoes
- 1/3 lb russet potatoes
- 3 large shallots, peeled and thinly sliced into half moons
- 8 cloves garlic, smashed and peeled
- 4 Tbsp butter
- 1/2 cup cream cheese
- 1/2 cup neutral oil (canola, sunflower, safflower, grapeseed, avocado)
- Salt and pepper to taste
- 1/4 cup freshly chopped chives
Directions:
1. Prepare Potatoes: Peeling the potatoes is optional; if you leave the peels on, make sure to clean them thoroughly. Quarter the potatoes and place them in a steamer basket along with the crushed garlic. Steam until tender and easily pierced with a fork, about 20 minutes.
2. Cook Shallots: While the potatoes are cooking, heat the oil in a pan over medium-high heat. Once hot (it should spit when a drop of water is flicked into it), add the sliced shallots. Stir regularly until they turn golden brown, about 15 minutes. Use a mesh strainer to remove the shallots and place them on a paper towel-lined plate.
3. Mash Potatoes: Once the potatoes are cooked, transfer them to a bowl. Add the butter, cream cheese, and shallot oil. Season with salt and pepper. Mash with a potato masher until smooth with a few chunks for texture. The steamed garlic will blend easily into the mix, adding extra flavor.
4. Serve: Top the mashed potatoes with crispy shallots, fresh chives, and a sprinkle of cracked pepper. Enjoy!
