Black Spanish Radish Chips with Miso Aioli

These crispy radish chips are a delicious and healthy snack, perfect for munching on during colder weather. Paired with a flavorful wasabi aioli, they make for a highly addictive treat. If you’re short on time, you can also use store-bought miso or aioli for a quicker version.

For the Radish Chips

Ingredients:

- 1 lb Black Spanish Radish (the larger, the better), cleaned and tails removed

- 1 Tbsp vegetable oil (Sunflower, Canola, Safflower, etc.)

- 1 Tbsp toasted sesame oil

- 2 tsp kosher salt

Directions:

1. Preheat the oven to 400°F (200°C).

2. Use a mandolin to slice the radishes into 1/8" circles.

3. Toss the sliced radishes with vegetable oil, toasted sesame oil, and salt.

4. Arrange the radish slices in a single layer on a parchment-lined sheet tray. Do not overlap them; use a second sheet tray if necessary.

5. Bake for 10 minutes, then rotate the tray and bake for another 10 minutes. The radishes should be turning golden brown and the edges should be curling.

6. Remove from the oven and let cool completely before eating.

For the Wasabi Aioli

Ingredients:

- 2 egg yolks

- 2 Tbsp Dijon Mustard

- 2 Tbsp lime or yuzu juice

- 2 cloves garlic, peeled and grated or pressed

- 1/2 tsp salt (plus more to taste)

- 3/4 cup vegetable oil

- 2 Tbsp toasted sesame oil

- 1 Tbsp wasabi paste

- 1 Tbsp chili oil

- Toasted sesame seeds for garnish

Directions:

1. In a medium bowl, combine egg yolks, lime juice, mustard, salt, and garlic. Whisk well.

2. Slowly stream in the vegetable oil a little at a time, making sure to fully incorporate it before adding more. After all the vegetable oil is added, mix in the chili oil and toasted sesame oil.

3. Add the wasabi paste to the aioli and whisk thoroughly. Taste and adjust seasoning with more lime juice, salt, or wasabi to your preference.

To Serve

1. Place the aioli in the center of a large serving bowl.

2. Arrange the crispy radish chips around the aioli in a circle.

3. Top the aioli with toasted sesame seeds and serve.
