1 lb brussel sprouts, washed, trimmed and left whole
3 cloves garlic, peeled and roughly chopped
1/2 cup onion, cut into chunks
Chopped fresh thyme
Salt and Pepper
Preheat oven to 350 F
Place the Brussels sprouts, garlic and onion in a baking dish. Pour 3 tsp of olive oil over them and stir lightly. Place them in oven and bake for 15 minutes. Ad
Add a splash of sherry vinegar or sherry, salt and pepper and freshly chopped thyme. Increase the heat in the oven to 375 F. Cover the Brussels with a lid or tin foil and bake for another 10-20 minutes until the sprouts are tender to your liking. Enjoy!
